  • Portobello mushroom
  • 2 free range eggs
  • Organic spinach
  • Organic cilantro
  • Organic tomatoes
  • Organic Purple onion
  • Avocado oil
  • Sea Salt
  • Pepper


  • Heat oven to 350 °F.
  • Coat bottom of glass pan with avocado oil.
  • Place Portobello in pan.
  • Drizzle with avocado oil.
  • Crack both eggs over mushroom.
  • Top with chopped veggies.
  • Add sea salt and pepper to taste.
  • Bake for 20 minutes.
